Where Traceability Fails
Today’s systems depend largely on labels, paperwork and QR codes. While useful, these tools can be duplicated and disconnected from the physical product.
To restore trust, Europe needs authentication that combines scientific proof of origin with tamper-proof digital records, linking the physical and digital worlds.
Europe’s premium dry-cured hams - including products protected under European quality schemes such as Protected Designation of Origin (PDO) and Protected Geographical Indication (PGI) - face growing risks from mislabelling and counterfeit products.
Research suggests that up to 10–12% of high-value meat products may be affected. At the same time, smaller producers often lack access to advanced authentication technologies, leaving heritage, reputation and consumer trust exposed.
